We are rethinking what a sweet shop can be — not a factory, not a franchise, but a kitchen where the same hands that shaped the first piece also shaped the last. Every fold, every press, every syrup ratio is a decision made before the city has woken.

Nolen Gur · The Winter Gold

The Shiuli tappers begin climbing in October. Each manages 100+ date palms, cutting by day, collecting sap by night — temperature is everything. The sap is so volatile it must be boiled the same morning it is collected. What arrives at our kitchen by noon is the colour of dark honey and smells of caramel and smoke. We use it the same day.

Chhena · The Foundation

Full-fat buffalo milk is curdled with the juice of one lemon per litre — no vinegar, no citric acid. The chhena is hung in muslin for exactly 90 minutes; longer and it dries out, shorter and it won't hold shape. The pressing is done by hand. The warmth of the palm matters. This is not metaphor.

Wedding Trays

Three hundred pieces of sita bhog and mihidana, ready by Friday morning. We take wedding orders six weeks in advance — not because we are slow, but because the gur has to be right.

Wedding orders include custom trays in banana leaf and terracotta, labelled with the couple's name in Bengali script. Minimum order: 200 pieces. Delivery within Kolkata.
